Broccoli Bacon Cheddar Salad - Low Carb Gluten Free

Broccoli bacon cheese salad - easy AND healthy

Now that summer is here and the temps are triple digits, the last thing you want to do is heat up the kitchen.   This Low-Carb and Gluten Free Broccoli Bacon Cheddar Salad is a breeze to make and comes together in about 20 minutes, so it’s the perfect summer dish.

Every bite is packed with flavor… a combination of sweet, tangy, crunchy and creamy makes this broccoli salad recipe so good.

I mix it up in the morning, stick it in the refrigerator to marinate and by lunch time, it’s ready to scoop out on a bed of chopped lettuce, and seldom lasts more than one meal.

Depending on what I have in the house, I use grapes or dried cranberries and either sunflower seeds or slivered almonds.  Any way you mix it, it’s still delicious.

Low Carb Broccoli Bacon Cheddar Salad

  • 6 c.       broccoli florets – broken into little pieces
  • 1 c.        seedless grapes – cut in half or dried cranberries
  • 1 c.        red onion – finely chopped
  • 1/4 c.    fresh chopped chives
  • 2 c.        shredded cheddar cheese
  • 1/2 c.    raw unsalted sunflower seeds or slivered almonds
  • 3/4 c.    bacon – crumbled into little pieces
  • 1 c.         mayonnaise
  • 1 T.        raw honey
  • 2 T.        lemon juice
  • 1/2 t.     dill weed

In a large bowl, combine broccoli, grapes, red onion, cheddar cheese, sunflower seeds, and bacon.

In a small bowl, mix the mayonnaise, Italian seasoning, dill, lemon juice, and honey.

Pour mayonnaise mixture over the broccoli mix and toss.

Cover and refrigerate for at least 1 hour before serving.

Add a grilled chicken breast and you’ve got one healthy meal.

This Broccoli Bacon Cheddar Salad is one of my favorite “go-to”salads all year long.  It’s my specialty for family get-to-gathers and church funeral meals.   I have no idea how many times I’ve been asked for the recipe.  It’s definitely a recipe to keep handy.
