Easy, Healthy and Vegan - Potato Pot Pie
This vegan recipe is one of several that I was given when I attended the Vegan Cooking Class at the Seventh-Day Adventist Church several years ago. Add a side salad and you have a complete meal.
Preheat oven at 350 degrees.
Pre-cook a large pie-crust for 7 minutes.
Blend until smooth:
1 c. raw cashews
2 c. water
In a separate bowl, mix well:
3 medium sized potatoes – cubed
2 c. frozen mixed vegetables
2 T. onion flakes
1 t. garlic powder
1 t. basil flakes
2 T. yeast flakes
1 T. Italian seasoning
Pour the cashew/water blend over the vegetables and mix well. Pour into the pre-cooked pie shell.
Bake 45 minutes or until potatoes are done.
Note: On occasion, I’ve added chopped broccoli and cauliflower and cut back on the mixed vegetables. Either way, it turns out fantastic. We love it.
